Puzzle explanation

The omissions from down entries in the grid were the names of Greek letters. The unclued, encoded across entries were Greek dishes: keftedes, avgolemono, spanakopita, taramasalata, souvlakia, meze. The puzzle’s title is an anglicised form of the Greek nostimos, meaning “tasty”.
